Raw Coconut Macaroons

These are so good. I never really liked the cooked version as they were too sweet but these are just yummy!!

Ingredients

3 cups of shredded coconut

3 to 5 medjool dates

1/4 cup of honey

1/4 cup agave syrup – you can use all honey or all agave as you prefer

1 tsp vanilla extract

Method

  • Add all ingredients to a food processor and process until you have a soft dough. I had to add extra dates as needed in order to get the right consistency.
  • Turn dough out and break of small pieces. Roll into a ball and then flatten onto a dehydrator tray.
  • Dehydrate at about 110 degrees for 4 – 5 hours or longer if you want a crispier biscuit.
  • Enjoy……………

NB. I divided my mixture in half and into one half I added a tbsp of cacao powder to make a chocolate macaroon.
