Key Lime Pie

This is a very simple desert to make and quiet impressive. It makes good use of avocados that I just love…..
Ingredients
For the crust
1 cup pecan nuts
4 -5 medjool dates – you may need to adjust depending on the dates, some can be drier than others.
For the filling
4 avocados
1 and 1/4 cups of fresh lime juice or the juice of about 6 limes – depends on how ‘limey’ you want your pie to be. I prefer mine to be quite ‘zingy’ but it is best to adjust to your own taste.
1/4 cup agave nectar or honey – again add less to start and then adjust to taste
1/3 cup coconut oil – can be brought in most health food shops
You will need 1 x 7inch spring bottomed cake tin – if you use a larger one then adjust the ingredients accordingly.
Method
- Make the crust by processing the nuts and dates in a food processor. Press the mixture into the bottom of the cake tin until nice and firm and even.
- Clean the food processor and then add the flesh of the avocados, the coconut oil, the lime juice and the agave syrup and process until you have a smooth, creamy consistancy. Pour this over the crust and then refrigerate until set.
- Decorate with limes, coconut and enjoy……..
