Raw Ginger Biscuits

Raw Ginger Biscuits

I made these as part of our Christmas ‘goodies’ and they were delicious. I’m not sure who the original recipe belongs to so can’t give credit but thank you whoever thought these up!!

They are dehydrated but in my opinion you could roll the dough into balls, chill and eat just like that as they would still be sooooo good.

Ingredients

1 cup raw almonds

1 cup shredded coconut

3/4 cup dates – I used medjool dates

1 tsp sea salt

1 inch fresh grated ginger – I used slightly more as I like quite a strong gingery taste

Method

  • Process the almonds and salt together until you have a flour like texture with no chunks of almonds left.
  • Add the rest of the ingredients and process until you have a soft dough.
  • Turn out and take small chunks of dough, roll into a ball and flatten onto a dehydrator tray (or a baking tray if you are just chilling them)
  • Dehydrate at about 110 degrees for about 4 – 6 hours or until you reach the required texture – means having to taste test !!!!!!

I made some raw chocolate to spread on top of mine and make a more decadent biscuit!!

Ingredients

2 tbsp raw cacao butter

1 tbsp raw cacao powder

agave syrup to sweeten

Method

  • Melt the butter and then add the powder and sweeten to taste.
  • Leave the mixture in the fridge for a little while to make it easier to spread.
  • Spread on biscuits, allow chocolate to set and enjoy………
